2 c. cooked, diced, chicken
2 c. cooked brown rice, cooled
1/2 c. chopped green onion
1/4 c. oil
1/4 c. apple cider vinegar
1/2 c. chopped celery
1 c. chopped walnuts or pecans
1 can sliced water chestnuts
1 chopped apple
1 chopped green pepper
3/4 c. mayonnaise
6 oz. pineapple, diced or crushed
1/2 tsp. salt
dash of pepper

Cook rice and cool. The night before mix rice, onion, oil and vinegar. Chill overnight. Drain the pineapple. Combine remaining ingredients at least 2 hours ahead. Add more mayonnaise if necessary.
