1 Tbsp. Olive Oil
1 lb. Rolled Pork Loin Roast
Salt and pepper
1/2 c. Pecan Pieces
1/4 c. Bourbon
3 Tbsp. Dark Brown Sugar, packed

Directions:
Directions:
Heat oil in large frying pan and brown roast. Put meat on a rack in roasting pan, sprinkle with salt and pepper. Cook 30 minutes in 325º oven. Add pecans to pan and cook 1 minute, remove. Combine bourbon, sugar and 1/4 tsp. salt in pan. Boil until sugar dissolves and the bourbon reduces slightly (1-2 minutes). Baste meat with bourbon sauce and cook 30 minutes more. Sprinkle with pecans.
