1 lb hamburger meat
1 box Hamburger Helper (Four Cheese Quesidilla)
1 can mild green chilies, diced
1 can Ro-tel - mild
1 pkg frozen vegetables (Southwest Blend - mixture of corn, black beans, onions, and chilies all combined)
1 pkg shredded cheese (mixed blend of cheddar and jack)
1 box Jiffy corn muffin mix
1 egg
2 T milk
Sour Cream - if desired

Brown hamburger meat and green chilies on top of stove - drain, then mix in Hamburger Helper - cooking per directions, except add the cheese sauce mix in with the rest of the dish. Then, add 1 can Ro-tel and frozen veggies and cook for another 6 minutes. Set aside.
Mix corn muffin mix, egg and 2T milk together. Using and non-stick spray, spray deep baking dish (I used oblong) Spread corn muffin mixture evenly on bottom of pan. Add hamburger mixture above and bake COVERED in a 350º oven for 20 minutes. Then add shredded cheese to the top and bake in additional 10 minutes UNCOVERED.
Pull out, let stand for 5 minutes, cut into squares and enjoy! Oh, make sure you put a dollop of sour cream if you like too!
