Turkey Souffle Recipe

Nonstick spray coating
1/2 pd ground raw turkey
1/4 c sliced green onion
2 T cornstarch
1/4 tsp salt
1/4 tsp paprika
1/8 tsp pepper
3/4 cup skim milk
2 T grated Parmesan cheese
2 T chopped pimiento
3 egg yolks
3 egg whites

Preheat oven to 325º
Spray a 10 in skillet with nonstick spray coating. Add turkey and onion. Cook till turkey is no longer pink. Do not drain.
Stir cornstarch, salt, paprika, and pepper into skillet. Add milk all at once. Cook and stir till thickened and bubby. Cook and stir for 1 minute more. Stir in Parmesan cheese and pimiento.
In a medium mixing bowl beat egg whites till stiff peaks form (tips stand straight). Gradually fold in turkey mixture. Pour into an ungreased 11/2 quart souffle dish.
Bake about 40 minutes or till a knife inserted near the center comes out clean.
Serve immediately.
