2 skinless, boneless breasts of chicken.
Kosher salt and freshly ground pepper
1/2 teaspoon paprika
2 tablespoon unsalted butter
1/4 cup finely chopped onion
1/4 cup dry white wine
2/3 cup heavy cream
2 tablespoons drained capers

1. Sprinkle chicken on both sides with salt, pepper and paprika.
2, Heat butter in a heavy skillet and put in chicken pieces, "skin-side" down. Cook over medium heat about 5-6 minutes on side and turn. Cook 2 minutes and scatter onions around chicken.
3. Cover closely and cook over low heat about 8 minutes. Transfer to a warm platter, covered lightly with foil.
4. Add wine to skillet and stir to dissolve brown particles on the bottom and sides of the skillet. Cook until most of the wine has evaporated.
5. Add cream, capers, salt and pepper (remember the capers are salty). Bring to a boil over high heat. Add any juices that accumulate in the platter holding the chicken. Cook stirring, 1-2 minutes until slightly reduced. Spoon sauce over chicken and serve.
