Kolaches Recipe

3 to 4 1/2 c flour
1 tbsp yeast
1 c warm milk
3/4 c melted butter
1/2 c sugar
1 tsp salt
4 egg yolks

---Apricot filling---
2 cups dried apricots in small saucepan; cover with water; add 1 tbsp lemon juice and 1/2 c sugar. Simmer till soft, then mix in blender till smooth.

In a large mixing bowl, stir together 2 cups of flour, yeast, sugar and salt. Add milk, butter, and egg yolk. Continue adding flour until a nice dough is formed.

Roll into a ball, oil and put in bowl and cover until doubled in size (1-2 hours).

Punch down dough; divide in half on lightly floured surface. Cover and rest for 10 minutes. Shape each half of dough into 12 balls, pulling the edges under to make smooth tops.

Place balls 3 inches apart on prepared baking sheets. Flatten into 2-3" diameter. Cover and rise till doubled (about 30 minutes).

Using thumb, make dent in middle of dough, fill with apricot, then brush with cream around edges of rolls and sprinkle with sugar.

Bake in a 375 oven 10-12 minutes, or till rolls are golden brown.
