2 medium zucchini, sliced
2 medium squash, sliced
1 medium onion, diced
2 cloves garlic, crushed and diced
2 tbsp oil

1 packet of chicken broth
1 can diced tomatoes with Italian seasonings
1 /2 tsp basil
Salt and pepper to taste
1/2 c Parmesan cheese

Directions:
Directions:
Saute onion in oil in large oven-proof pot. Add garlic, then remaining ingredients, except the Parmesan cheese.

Transfer to 13 x 9 baking dish.

Bake 350º until all ingredients are crisp-tender (about 45 minutes).

Top with Parmesan, turn to broil to brown cheese.
