1/3 C. SHORTENING
1 C. SUGAR
2 EGG YOLKS
3/4 C. STRONG COLD COFFEE
2 C. FLOUR
3 TSP. BAKING POWDER
1/4 TSP. SALT
1 TSP. CINNAMON
1/4 TSP. CLOVES
1/4 TSP ALLSPICE
2 WHITES OF EGGS

Directions:
Cream 1/3 cup shortening and 1 cup sugar and beat until light; beat in the yolks of two eggs; add slowly 3/4 cup strong cold coffee; then add 2 cups flour sifted with 3 teaspoons baking powder, 1/4 teaspoon salt, 1 teaspoon cinnamon, 1/4 teaspoon cloves, 1/4 teaspoon allspice; mix well; fold in well beaten whites of eggs. Pour into two greased and floured square layer tins and bake in moderate oven at 350 degrees for 25-30 minutes.
