2 pkgs yeast
1/2 c. warm water
1/4 c. butter
1/4 c. sugar
1 1/2 tsp. salt
2/3 c. scalded milk (cooled to lukewarm)
1 egg
4- 4 1/2 c. flour

Blueberry Filling
1/2 c. sugar
3 TBSP cornstarch
1 pint fresh blueberries ( may use 1 can and drain off 1/4 c liquid
2 TBSP lemon juice
1 TBSP butter

Directions:
Directions:
Dissolve yeast in warm water. Combine butter, sugar, salt, and cooled milk. Stir in egg. Add flour to form a stiff dough. Let rise in a warm place until double. Punch dough down and divide in half. Roll out one portion at a time to 9 x 18 inches. Brush with melted butter. Spread one half of blueberry filling over dough spreading to the edge. Roll like a jelly roll. Seal edges and form into horseshoe shape. Placed on greased baking sheet and cut slits into top of dough. Let rise for 1 hour. Brush with milk, sprinkle with a mixture of 1/4 cup sugar and 1/2 grated lemon rind. Bake 375º for 25-30 min.

Filling Preparation:
Combine 1/2 c. sugar and cornstarch in saucepan.Add blueberries and lemon juice. Cook until thick. Add butter.
