Greek Pasta Salad Recipe

2/3 c olive oil
3 T garlic/peppercorn vinegar or white vinegar
1/4 c chopped fresh basil or 2 tsp. dry basil
3 T chopped green onions
3 T fresh grated parmesan cheese
1/2 tsp salt
1/4 tsp. pepper
1/4 tsp. oregano leaves

Add all of these ingredients to a food processor and combine.

8 oz uncooked tri-color spiral macaroni
1 each of small green, red and yellow bell pepper cut into 1/4 inch strips.
1 medium tomato - diced.
1/2 c pitted and sliced greek or kalamata olives
6 oz crumbled Feta cheese

Cook macaroni for only eight to nine minutes. Rinse in cold water

Then combine all ingredients with the processed dressing and refrigerate for one hour.
