1 pound of lean ground beef
1/2 yellow onion chopped
1/2 tsp garlic powder
1 pound of fresh zucchini, cut into 1/4" slices (don't peel)
6 oz. longhorn cheese - grated
1 can cream of mushroom soup, undiluted

Directions:
Directions:
Brown meat with onions and garlic. Drain off grease. Wash zucchini and cut off tips. Do not peel. Cut in 1/4" slices. Cook zucchini in boiling water for 5 minutes. Grease 1-1/2 quart baking dish. Layer meat, zucchini, cheese. Repeat layers. Mix soup with 1/4 cup water. Add on top. Bake 350ºF for 40 minutes (uncovered).
