1 cup sugar
6 tbsp all purpose flour
2 cups grated sharp cheddar cheese
2 -20oz cans pineapple chunks, drained, reserve 6 tbsp of juice
1 cup ritz cracker crumbs
8 tbsp (1 stick) butter, melted plus extra for greasing pan.

Grease medium size casserole dish with butter. In a large bowl, stir together sugar and flour. Gradually stir in cheese. Add the drained pineapple chunks. Stir until all ingredients are well blended. Pour the mixture in the prepared casserole dish. In a medium bowl, combine cracker crumbs, melted butter and the reserved pineapple juice. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes at 350ºF or until golden brown.
