"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Soak beans in water overnight, drain in morning.
Fry onions and bacon until saute in enameled cast iron pot or bean pot.
Add remaining ingredients, 2 cans of water and heat until hot. Cover beans with lid and place in oven at 325'F for 1-2 hours. Turn heat down to 250'F and stir occasionally for 4 hours. With cast iron pots these cook in this time, however if using a slow cooker or other pot may have to increase time for 4-6 hours.
