self-rising flour

Open can and drain the juice. Dump salmon into a mixing bowl and carefully remove the bones and skin. Stir the salmon with a fork. Mix in the egg adding flour as you stir. Continue to sift the flour into the mixture until the salmon is mostly dry. Melt crisco in frying pan then spoon salmon into pan. Press into a patty. Brown each side.

Some people like to leave the bone and skin in, removing is optional. The hotter you get your pan and the more crisco you add determines how crispy the patty will be. I use about a tablespoon of crisco to start, then add more when I flip the patty.
