1 lb. raw salmon
2/3 c. heavy cream
1/2 bunch scallions, green parts only, chopped
2 tsp. hot red pepper sauce
salt and black pepper to taste
1 lg. egg white, beaten lightly
1 T. vegetable oil

Directions:
Directions:
In processor, puree fish until smooth, about 1-1/2 minutes. Remove to bowl and mix in cream, scallions, hot sauce. Season with salt, pepper. Mix in egg white vigorously. Form 4 patties. Refrigerate until firm, 15 to 20 minutes.

Heat medium skillet. Add oil and saute salmon patties over medium high heat about 3 minutes per side or until just cooked through.
