Roux - 1/2 cup oil, 1/2 cup flour - cook over low heat until chocolate brown.

3/4 c chopped onion
1/2 c chopped celery
1/2 c chopped green pepper
2 cloves of garlic, minced
1/4 c butter

16 oz can diced tomatoes
1 smoked kielbasa, diced

1 tsp creole seasoning

32 ounces diced chicken

1 # shrimp, raw

1 1/2 c rice, cooked

1/4 c roux - browned

Seasoning Mix:
2 tbsp salt
2 tsp garlic powder
1 tbsp red pepper
1 tsp black pepper
1/2 tsp white pepper

Roux:
1 c oil
1 ¼ c flour

Directions:
Directions:
Make Roux; set aside.

Cook rice and set aside.

Saute onion, celery, green pepper and garlic in butter until tender.

Stir in undrained tomatoes, sausage, seasoning and enough rough to make a nice flavor - it's up to you.

cover and simmer 30 minutes.

Stir in chicken and simmer 15 minutes or till chicken is tender.

Add Shrimp and cook 3 minutes, or till just done.

Serve over rice.
