1/2 c shortening
1 1/4 c sugar
2 large eggs
1 1/4 c flour
1 tsp baking powder
1/4 tsp salt
1/2 c milk
1 tsp lemon zest,
1/4 c lemon juice

Directions:
Directions:
Preheat oven to 350º.

Cream shortening and 1 cup of sugar till fluffy. Add eggs, 1 at a time, beating till smooth.

Into another bowl, sift flour, powder, salt. Stir mixture alternately with milk into the sugar mixture. Stir in zest. Put in well buttered and floured loaf pan or 3 mini loaf pans.

Bake 1 hour for large pan, 30-40 minutes for mini pans, or till pick comes out clean. Transfer to cooling rack.

Heat 1/4 c sugar and lemon juice until sugar is dissolved. Poke holes all over the bread, and pour glaze over the top. Cool and serve.
