10-12 taco sized tortillas (homemade are the best)
2 Chicken breasts or 4 halves
Can of Green Chiles
Can of Green Enchilada Sauce
Can of Ro-tel diced tomatoes and green chilies (whatever heat you like)
8oz Sour Cream
Block of Cream Cheese cubed and softened
1 pkg Shredded Cheddar or Mexican Cheese Blend
Olive Oil (Once around the pan)
1 tsp Itchy Powder (Ground Pepper. Fresh is best!)

Directions:
Preheat oven to 375*. Saute chicken in ground pepper and a little olive oil and cube. Add Ro-tel, cream cheese, and sour cream. Stir until all is melted. Warm tortillas in microwave 20 seconds to soften them up. Sprinkle shredded cheddar and a scoop of the chicken mixture down the center of each tortilla and roll. Place all rolled tortillas (flap side down) in baking dish. (It's best to put a little cooking spray on the bottom and then a little bit of the chicken mixture so that the bottoms of the enchiladas don't get too dry while cooking). If any chicken mixture is left, pour over the top of all enchiladas, then the enchilada sauce, then the green chilies, and finally all the remaining cheddar. Cover and bake for 20-30 minutes until bubbling and the cheese is fully melted. You may substitute the chicken for beef, but why mess with perfection? ;) Enjoy!!!
