Turkey Drippings
1/2 cup flour
water or other broth

Directions:
Pour turkey drippings into 4 cup measure. Let fat separate from drippings. Skim 1/2 cup fat into saucepan. Skim off any remaining fat and discard. Add 1/2 cup flour to saucepan and cook over medium heat until roux is blended and bubbly. Add liquid (water or other broth) to drippings to equal 4 cups. Blend slowly into roux in saucepan, stirring until thick.
