Susie's Gumbo Recipe

1 c chopped onions
1 c chopped green peppers
1 c chopped celery
1# sausage, cut into chunks
8 oz chopped chicken
1/2 # sausage
1 pound Shrimp
3 qts chicken stock
½ c tomato sauce

Seasoning Mix:
1 tbsp salt
2 tsp garlic powder
1 ¾ tsp red pepper
1 ¾ tsp black pepper

1 c oil
1 ¼ c flour

Cook flour & Oil on med-low heat until chocolate brown.

• Make roux & seasoning mix; set aside.

• Sauté onion, peppers & celery
• Add stock and tomatoes
• Add roux, 1 tbsp at a time until correct consistency and flavor.
• chicken and sausage
• Simmer about an hour
• Add shrimp and cook till just done

• Serve over rice
