1 Standing Rib Roast; salt and pepper

2 c beef stock
1 c red wine
1 pint mushrooms, sliced thinly.

Let meat stand at room temperature for at least an hour prior to cooking.

Preheat oven to 375 degrees. Rub meat well with salt; sprinkle with pepper; Place meat fat side up in a shallow roasting pan. Do not cover; Do not add water.

Put roast in oven; cook for one hour. Turn off heat, but do not open oven door at any time until ready to serve.

Regardless of length of time roast has been in the oven, 30-40 minutes prior to serving; turn oven on again; reset temperature to 375 degrees. Cook meat for the remaining 30-40 minutes.

Open oven door; remove roast to serving platter. The meat should be very brown on the outside. Carve thin slices. It should find it perfectly pink all the way through (medium-rare).

Reduction:

Simmer liquids 20-30 minutes, or till the mixture is slightly reduced. Add sliced mushrooms, salt and pepper to the sauce, cook an additional 5 minutes.
