3 tablespoons butter
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
2 cups grated cheddar cheese
1/2 pound Velveeta Cheese, grated
1 cup Mozzarella Cheese, grated
1 16 oz box macaroni (penne pasta)

In large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Remove from heat. Slowly stir in milk until smooth. Stir constantly for 10 minutes over low heat until thick, remove from heat and stir in 1 1/2 cups cheddar cheese, Velveeta and Mozzarella cheese until melted. Put cooked macaroni in a greased casserole dish and pour cheese mixture over and mix well. Sprinkle cheddar cheese on top. Bake 375 degrees for 20 minutes.

Mallory found this recipe online and we made a few changes and it turned out GREAT!!!! A great dish at Christmas and Thanksgiving. This dish makes a lot of macaroni so it is especially good for a large gathering.
