3 tbsp olive oil
4 cups chopped vegetables (broccoli, snow peas carrots, onion, or whatever you have on hand)
2 (3oz) pkgs instant ramen noodles (any flavor)
1 2/3 cups water

Directions:
Directions:
Heat olive oil in large skillet or wok. Add vegetables; cook stirring over high heat for 1 min. Coarsely crumble dry noodles. Stir in noodles, noodles seasoning packets and water. Cover and steam 3 to 5 minutes or until liquid is absorbed stirring twice during cooking time. Serve immediately. If desired may add cut-up cooked meat to replace some of the vegetable. Recipe can be halved.
