2 pkgs frozen chopped spinach, drained
4 beaten eggs
1/2 cup melted butter (or less)
1/2 cup Parmesan cheese
1/2 tsp salt
1 onion finely chopped
2 cups herb stuffing mix (I use Pepperridge Farm)

Directions:
Directions:
Mix together and chill 15 minutes. Shape into balls.
Put on greased cookie sheet: bake 15 min.s in 350º oven.

These freeze well uncooked. Flash freeze them on a cookie sheet and save in zip lock. Cook right before eating.
