1 (3 1/2 to 4 lb.) chicken
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. vegetable oil
1 pkg ( 6 oz.) chicken flavored stuffing mix
1 c. chopped apple
1/4 c. chopped walnuts
1/4 c. raisins
1/4 c. thinly sliced celery
1/2 tsp. grated lemon peel
1/2 c. apple jelly
1 tbsp. lemon juice
1/2 tsp. ground cinnamon

Preheat oven to 350 degrees. Sprinkle inside of chicken with salt and pepper; rub outside with oil.

Prepare stuffing mix according to package directions. Add apple, walnuts, raisins, celery, and lemon peel; mix thoroughly. Stuff body cavity loosely with stuffing. Place chicken in a baking pan. Cover loosely with aluminum foil and bake for 1 hour.

Combine jelly, lemon juice, and cinnamon in a small saucepan. Simmer over low heat until blended. Remove foil from chicken; brush with jelly glaze. Roast chicken, uncovered, brushing every 30 minutes with glaze or until a thermometer inserted in thigh registers 185 degrees. Let chicken stand 15 minutes before carving.
