1 cup all purpose flour
1 tsp baking soda
1/8 tsp salt
cup firmly packed light brown sugar
cup sugar
1 cup smooth peanut butter
cup butter softened
1 large egg
tsp vanilla extract
Cherry preserves

1. Sift together flour, soda and salt;
set aside.
2. Combine sugars in large mixer
3. Add peanut butter and butter; beat until
smooth and creamy.
4. Add egg and extract; mix
5. Gradually beat in flour mixture just until
6. Refrigerated, covered, at least 1 hour.
7. Preheat oven to 375 degrees.
8. Shape dough into
1 inch balls.
9. Place on unbuttered cookie sheets
1-1/2 in. apart.
10. Use handle of wooden spoon
to make deep indentation in center of each ball.
11. Bake 10-12 minutes or until lightly browned and
12. Cool on cookie sheets until firm enough to lift.
13. Transfer to wire racks to cool completely.
14. Fill centers with cherry preserves.
