2 cups chopped, cooked chicken or turkey meat
4 cups cooked white rice cooked in chicken broth
1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup mayonnaise
2 tablespoons grated onion
1/2 cup chopped celery
1/2 cup slivered almonds
1 tablespoon lemon juice
2 cups shredded sharp Cheddar cheese
2 cups crushed potato chips
1/4 cup milk
salt and pepper to taste

1. Preheat oven to 400 degrees F
2. In a large bowl combine the chicken, rice, soup, mayonnaise, onion, celery, almonds, 1 cup cheddar cheese, lemon juice, milk, salt and pepper. Mix well. Spread this mixture into a lightly greased 9x13 inch baking dish, cover with foil. Bake in the preheated oven for 20 to 25 minutes
3. Remove from oven add remaining cup of cheese and bake another 10 minutes or until cheese is melted.
4. Add crushed potato chips and bake till lightly brown
