1 stick unsalted butter at room temp.
¾ cup granulated sugar
¾ cup packed light brown sugar
1 cup smooth peanut butter
2 eggs
1 tsp vanilla extract
2 ½ cups all-purpose flour
1 tsp baking soda
¼ tsp salt

Directions:
Directions:
1. Preheat the oven to 350 degrees.
2. Lightly grease or spray cookie sheets.
3. Cream the butter and the sugars on
medium speed until light, about 2-3
minutes.
4. Add the peanut butter and mix well.
5. Add the eggs, one at a
time, beating well after each addition.
6. Blend in the vanilla.
7. Whisk together the flour, baking soda and salt.
8. Stir the flour mixture into the batter
to make a soft dough.
9. Form balls a little larger than the size of a walnut,
place on the prepared sheets and
cross-hatch lightly with the tines of
a fork, pressing down to create discs.
10. Bake for 10-12 minutes, or until set and
slightly golden on the top.
11. Allow to
cool completely on wire racks.

Hershey kiss toppers - instead of cross hatch, press a hershey kiss on the top shortly after they come out of the oven.
