1/4 c margarine
1 c chopped onion
4 c cooked white rice
2 c sour cream
1 c cottage cheese
1 lg bay leaf, crumpled
1/2 tsp salt
1/8 tsp pepper
3 cans chilies (4 oz) drained, halved lengthwise
2 c grated cheese
chopped parsley

Directions:
Directions:
Preheat oven to 375 degrees. Spray 12x8x2" pan with Pam. Saute onion for butter 5 minutes. Remove from heat; stir in hot rice, sour cream, cottage cheese, bay leaf, salt and pepper. Toss lightly to mix well. Layer half the rice mixture in bottom of dish, half the chilies, sprinkle with half the cheese; repeat.
Bake uncovered for 25 minutes. Sprinkle with chopped parsley.
Can accompany baked ham, roast, hamburgers or steak, along with a green salad and bread.
