6 boneless, skinless chicken breasts
8 ounces sour cream
2 cans Healthy Request cream of chicken soup
2 rolls Ritz crackers
5 tablespoons poppy seeds
8 ounces Monterrey Jack cheese, shredded
3/4 cup butter
Salt and pepper to taste

Preheat oven 325
Season chicken breast and brown in olive oil
Place chicken in 9x13 baking pan
Mix cheese, soup, sour cream and 3 T poppy seeds
Pour over chicken
Top with crushed crackers and remaining 2 T poppy seeds
Drizzle butter over the crackers
Bake uncovered 30-40 minutes or until bubbly
