2 - 10oz boxes of frozen broccoli cuts or chopped broccoli (I use both usually);

1 c just-cooked rice (still hot)
1 small onion, diced
2-3 slices bacon
1 small jar of Cheese Whiz
1 small can sliced water chestnuts
1 can cream of mushroom soup

Directions:
Directions:
Cook bacon strips and retain grease. Saute onions in the bacon grease and set aside while the rice is cooking. Cook the broccoli until just tender; drain and set aside. When the rice is done (cook it in a big enough pan to be able to do these next steps.) Mix in the cheese whiz, then the cream of mushroom soup, then the onions and the water chestnuts. Stir together this mixture with the broccoli until thoroughly mixed, then pour in a casserole dish. Bake at 350º for 30 minutes or until slightly bubbly.
