Buy lean beef short ribs with bone in
5 peppercorns
5 whole allspice
1 bay leaf
salt and pepper to taste
Kitchen Bouquet

Potatoes for Boiling
1 recipe of Homemade Noodles (see separate recipe)

Directions:
Directions:
Brown ribs on all sides in a small amount of Crisco. Cover with water, add 5 peppercorns and 5 whole allspice, and 1 bay leaf. Cover and turn heat down to low. Cook until very tender - about two hours. Check to see if they are fork tender. Remove ribs to platter and keep warm. Add a little Kitchen Bouquet to the broth. Add noodles and cook about 10 minutes until done. Return ribs to kettle. Serve with Boiled potatoes.

Tradition has it that you smashed up the potatoes, put the juicy noodles on top of the potatoes and the ribs on the side. Ahhhhhh.
