Ham, cheese, onions, peppers, mushrooms, etc. for filling

Prepare your choice of ingredients-shred cheese, chop and saute vegetables until tender, dice meat and slice mushrooms then lightly brown so that some of the liquid cooks out. Grate potatoes on large holes of grater-place in towel and wring water out. Cover bottom of heavy skillet with oil and heat over medium-high heat until oil shimmers. Place half of the grated potatoes in skillet about 1/2-inch thick (adjust heat so that bottom does not brown too quickly) then put filling on top (do not fill to edge) then put rest of grated potatoes on top. Press together with spatula. Turn when bottom is brown. Done when both sides are golden brown and filling is hot.
