1 refrigerated pie crust, room temperature
1 package of ground breakfast sausage (We use hot!)
2/3 cup whipping cream
1/2 cup whole milk
3 large eggs
1 can of Rotel
2/3 cup of shredded cheese
1/4 teaspoon of salt
1/4 teaspoon of pepper
Optional: fresh jalapenos, onions, or red bell peppers are really good diced up and thrown in! Just add them when you are browning your meat.

Position the rack on the bottom third of the oven and preheat to 400 degrees. then, brown your sausage and drain it thoroughly. Let it cool to almost room temperature. Next, beat the cream, milk, eggs, salt and pepper in a medium bowl to blend. Stir in the Rotel, cheese and sausage. Pour the mixture into the pie crust. Bake it until the filling puffs a little and is golden brown on top, about 25-30 minutes. Let it cool for 15 minutes. Then dig in!! It makes great leftovers!
