2 cups shredded cooked chicken
1 medium unpeeled red apple, chopped
3/4 cup dried cranberries
1/2 cup thinly sliced celery
1/4 cup chopped pecans
2 tbsps chopped green onion
3/4 cup light mayonnaise
2 tsp lime juice
1/2 tsp curry powder
12 slices of bread (I use whole wheat)
lettuce leaves

Directions:
Directions:
Combine the first 6 ingredients in a bowl. Combine mayo, lime juice and curry powder; add to chicken mixture and stir to coat. (adding salt and pepper to taste) Cover and refrigerate until ready to serve. Cut bread with cookie cutter ( whatever shape..i use a circle or heart). Top bread with a piece of lettuce then chicken salad.
