3/4 c. crushed saltine crackers ( corn flakes or
potato chips)
1/3 c. grated Parmesan cheese
3/4 tsp. salt
1/2 tsp. celery salt
1/2 tsp paprika
1/4 tsp onion powder
1/4 tsp pepper
3 Tbls. evaporated milk
3 Tbls. veg. oil
1 broiling / frying chicken ( about 3 lbs.), cut into
serving pieces

Heat oven to 375ºF. Mix crushed crackers, cheese, salt, paprika, onion powder, and pepper in shallow pan.

Blend milk and oil in another small shallow pan. Dip chicken in milk mixture, then in crumb mixture, pressing coating on all sides.
Arrange chicken, skin-side up, in shallow baking pan.
Bake until chicken is tender, about 1 hour.
Serve hot or cold.
