Ingredients:  
4 ripe, large tomatoes, cut into 1/2 inch pieces
1/2 lb. Brie, rind removed, cut into pieces
1/2 c. fresh basil leaves, cut into small strips
3 garlic cloves, peeled and finely minced
1/2 c. olive oil
1 heaping t. salt
1/2 t. fresh ground pepper
1 lb. pasta of choice

Directions:
Directions:
Mix ingredients in medium bowl and leave on counter at room temperature. Do not refrigerate. Room temperature allows the cheese to mellow.

Cook 1 lb. pasta in large pot of boiling salted water; drain well. Toss with brie mixture and serve immediately. Serve with Parmesan cheese.

This recipe serves 4-6 depending on if it's a main dish or side dish.

Placing the brie in the freezer for 10 - 15 minutes makes it easier to cut off the rind and cut into pieces.
