1 can whole kernel corn
1 can cream-style corn
1 (8oz) carton sour cream
1 egg
1 pkg. corn muffin mix (Jiffy)
1 small onion
salt, pepper, dried parsley to taste

Combine all ingredients and stir together; bake in a greased 8x8 inch casserole dish in 350º for 45 minutes.

My "Memere" - my grandmother - made this whenever she came to visit. Boston to Denver is a long way, so mostly we ate this at Christmas time! However, it has since been made at just about every family get-together. A little savory, a little sweet this makes a great addition to any potluck. Good for the pallet, good for the soul!
