1 roasted chicken - boned and skin removed
1 8oz box angel hair pasta
1 chopped sweet onion
1 chopped red bell pepper
1/2 cup chopped celery
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
2 cans chicken broth
1 pkg (2 cups) shredded Velveeta cheese
1 cup shredded mild cheddar
Paprika

Directions:

Cook and drain pasta. While water is heating for pasta, sauté onion and celery in small amount of extra virgin olive oil.

Mix all ingredients together except for mild cheddar and pour into a large pan (13 x 9).

Bake 30 minutes at 350 or until bubbly. Top with cheddar cheese and paprika. Bake an additional 10 minutes.

Casserole can be placed in a freezer pan before cooking in the oven. (If freezing, do not top with the mild cheddar cheese and paprika.) Simply remove from freezer and cook, covered, for 30 minutes at 350. Remove cover and cook an additional 30 minutes. Remove from oven and top with mild cheddar cheese and paprika. Bake an additional 10 minutes.
