12 ounces boneless chicken breast cut into bite-size pieces
3/4 c chopped onion
15 ounce can tomato sauce
1 T chili powder
1 c sour cream
1 T butter
2 four ounce cans of chili peppers, optional
1 t cumin
1 c shredded cheddar cheese
1 1/2 c shredded Monterey jack cheese
2 cups corn
5 ten inch tortillas

Preheat oven to 375. In a large skillet, saute chicken, onions in butter for 8 minutes. Stir in peppers, sauce, chili powder and cumin. Simmer 15 minutes. Meanwhile, combine sour cream and cheeses. Place a tortilla in a lightly greased 2 qt casserole dish. Cover with 1/5 chicken mixture, 1/2 cup corn and 1/4 sour cream mixture. Repeat layers 3 more times. On last tortilla place remaining chicken mixture and 1/2 c Monterey jack cheese. Bake 35 minutes.
