1 c sugar
6 tbsp cornstarch (sifted thru a strainer)
1/2 tsp salt
5 c milk
4 one-oz squares unsweetened chocolate, cut into small bits
or 1/2 cup Natural Cocoa Powder [try the Dutch Processed one from Penzeys.com]
3 tsp vanilla or almond flavoring...try a new one!

In a saucepan, whisk sugar, cornstarch and salt, then very slowly add milk to the mixture. Then add the chocolate. Cook over medium heat, stirring constantly with the whisk, especially when it begins to thicken. Once it thickens, cook two or three more minutes. Take the saucepan off the burner, add vanilla or other flavoring, and stir.

May serve hot or cold, may add a small amount of milk, or sliced bananas......
