1 onion
1 clove garlic
1 large eggs
Salt and pepper to taste
2 tablespoons oil for stir-frying, or as needed
2 cups cold cooked rice
1 cup frozen mixed vegetables
1 - 2 tablespoons light soy sauce or oyster sauce, as desired
1 pound diced pork or chicken

Chop onion and sauté with garlic in 2 tablespoons of olive oil. When onions are barely soft, add diced meat and cook until browned.

Remove from pan.

Add 1 tablespoon of oil to the pan and fry the egg, scrambling as it cooks. Salt and pepper to taste. As egg hardens, chop it into small pieces. Add cooked rice and soy sauce. Stir well to fully brown the rice. Add mixed vegetables. Cover and cook for 5 minutes, stirring once.

Add onions and meat. Cook on medium-low heat for 10 minutes stirring occasionally. Serve hot.
