2 1/2 lbs cauliflower- chopped
5 cloves garlic, sliced
1 2/3 cups chicken stock
2 1/2 teaspoons kosher salt
8 tablespoons nondairy creamer
5 teaspoons margarine

Directions:
Directions:
Place cauliflower, garlic, stock, and salt in a pot, bring to a boil. Cover and reduce to medium. Simmer 10 minutes or until cauliflower is tender. Process in a blender or with an immersion blender until smooth.

You can also substitute cauliflower with 8 whole carrots, peeled and sliced and let simmer a little longer. The orange color is beautiful and equally as delicious as the cauliflower.
