8 medium to large potatoes 1/4 cup oil 3 TBsp vinegar ( I use wine vinegar) 2 tsp salt 1/2 tsp pepper 1 tsp dry mustard 2 TBsp chopped parsley 2 TBsp finely minced onions Mayonnaise to taste ( you can omit this if you want )
Peel and boil potatoes. Drain and cool enough to handle them. Dice or chop while they are still warm.
Pour dressing over. Stir till saturated, cool and refrig overnight. Add mayonnaise if you want when you are ready to serve.
