¾ cup flour
½ tsp. baking soda
½ cup firmly packed brown sugar
½ cup sugar
½ tsp. vanilla extract
1 egg
½ tsp salt
½ cup shortening
1 ½ cup oats
¼ cup pecans (chopped)
Whole pecans
Hershey milk chocolate bars

Directions:

Preheat oven to 375˚.
Sift together flour, baking soda and salt. Add sugars, shortening, egg and vanilla. Beat until smooth, about 2 minutes. Stir in oats and pecans by hand. On wax paper, shape the dough into one 12 inch roll and chill for 2-3 hours or overnight. (The colder the dough, the easier to slice.) Slice dough into 1/2 inch disks and place on ungreased cookie sheet. Bake at 375˚ F for 10 -12 minutes or until golden brown.
Immediately after being removed from the oven, with the cookies still on the cookie sheet, top each cookie with a square of Hershey chocolate. Wait for the chocolate to melt a little and then place a whole pecan in the center. Remove from cookie sheet and cool.
