3 tbsp BUTTER
1/4 CUP SUGAR
1 EGG
1 1/4 CUPS S.R. FLOUR
VANILLA
1/2 CUP APRICOT JAM

TOPPING -
1 CUP COCONUT
3/4 CUP SUGAR
1 EGG

BASE -
BEAT BUTTER AND SUGAR TO A CREAM. ADD EGG & BEAT WELL, ADD VANILLA. SIFT FLOUR AND ADD TO MIXTURE TO FORM A STIFF PASTE. PRESS OUT EVENLY IN A GREASED 28 X 18CM TIN. SPREAD THINLY WITH APRICOT JAM.

TOPPING -
BEAT EGG, ADD COCONUT AND SUGAR, SPREAD OVER JAM. BAKE IN A MODERATE OVEN FOR 20 MINUTES. COOL SLIGHTLY BEFORE CUTTING INTO SQUARES.
