1 lb boneless chicken breasts, cut into 1" strips (chicken tenderloins work well here)
1/4 cup egg beaters
1/3 cup Italian bread crumbs
3 tbsp. olive oil
2 tbsp. butter
3 garlic cloves, chopped
1 cup fat free chicken broth
2/3 cup dry white wine
1 1/2 tbsp. chopped parsley
1/4 tsp. oregano
1/8 tsp. salt
pinch cayenne pepper
shredded parmesan cheese

Directions:
Directions:
Dip chicken in egg, then in bread crumbs. In large skillet heat olive oil. Add chicken and saute about about 6 minutes until browned. Remove chicken to plate.
Add butter and garlic and saute 1 minute. Add rest of ingredients and bring to a boil. Add chicken.
Simmer 10-15 minutes until cooked through.
Serve over cooked garlic roasted fettucine, brown rice or couscous. Sprinkle with parmesan cheese.
