Apples, peeled, cored and sliced

2 c flour
2 c sugar
1 Tbsp. cinnamon
2 cubes butter
Rolled oats, to taste

Directions:
Directions:
To make topping, combine flour, sugar, and cinnamon. Cut in the butter until the chunks of butter are almost blended in. (A food processor is useful for this.) Stir in oats as desired.

Place apples into a baking dish (9"x13"); heap the apples slightly. Press on the topping.

Bake at 350º for one hour or until apples are tender and soft and the topping is brown and crisp.

This recipe is a big favorite of the San Luis Obispo crowd, who enjoy the autumn picking season of fresh See Canyon apples. I especially enjoy trying the different apple varieties that are available at different parts of the season. My favorite apple crisp is made with a mix of golden delicious and braeburn apples.

If apples are old or lack flavor, try adding a little sugar and lemon juice to the apple slices before adding the topping. Some spices might help too.
