1 Large Onion Chopped
1 Can Chopped Chilies
1 Can Hunts Chili Beans
2 Cans Tomato Sauce
1 Large Can Stewed Tomatoes
2 Cans Sliced Olives
2 Cans of Corn
2/3 Large Can Rosasita Enchilada Sauce
1 quart Canned Chicken Broth or water
2 Cups Grated Cheddar Cheese
1 Cup Grated Jack Cheese
10 Corn Tortillas
Add chicken chunks (optional)

Directions:
Directions:
Cut and saute the union in a large pot. Add the chilies, beans, tomato sauce, stewed tomatoes, olives, corn, enchilada sauce, chicken broth and simmer together.
Cut the tortillas into small strips. Add the cheeses and tortillas. Stir frequently. The tortillas will dissolve and thicken the soup.
Serve hot, topped with sour cream. Best with corn bread!
