4 Ham Hocks
2 Medium Onions Chopped
1/2 Bunch of Chopped celery
TBsp Whole Peppercorns
2 TBsp Fresh Thyme
2 TBsp Olive Oil
3 Cloves Garlic finely chopped
Greens - escarole or spinach
2 Cans White Cannelloni Beans

Directions:
Directions:
In large Pot (Dutch oven works or a spaghetti pot) combine the 4 ham hocks, 1/2 chopped onions, chopped celery, peppercorns, fresh thyme - fill pot 1/2 to 3/4 full of water.
Boil ingredients then simmer until veggies are soft and ham falls away from the bone.

Chop the greens and add to pot.

Saute' garlic and remaining onions in olive oil. Chop ham meat finely and add to saute mix.

Add Saute mixture to pot and simmer for a couple hours.


Serve with crusty bread.

After simmering you can serve chunky or run through a food processor or blender or use a hand mixer to puree the soup.
